A Triple Crown Banquet

 

Welcome to The Kentucky Derby, the first leg of the Triple Crown of Racing!  Tonight we are taking you on a culinary tour of The Kentucky Derby, The Preakness and The Belmont Stakes.

 

We begin with Kentucky Spoonfish, a type of sturgeon related to the Russian Beluga of the Caspian Sea, and a caviar that is comparable in flavor to beluga and sevruga.  This is Kentucky’s gourmet treat!

 

The appetizers represent all three venues of the Triple Crown on a single plate.  For the Louisville portion, we considered the cheeseburger as a signature dish of the city, and then decided on the Louisville Hot Brown, a dish loved in this city since 1926, eight years before Louisville produced the first cheeseburger.  The Maryland crab cakes were brought in from Baltimore, and the mushrooms , well they were recommended by the head of the New York Racing Commission.

 

For the soup course, we give you a choice of two signature soups: Pimlico race track’s signature chicken noodle soup, or Belmont Park’s Manhattan style clam chowder. 

 

The main course will be the Kentucky classic derby dish, filet of beef with Henry Bain sauce. Henry Bain sauce created the sauce that bears his name at the prestigious Pendennis Club in Louisville in 1881. (Sam Culbertson was president of the Pendennis in the early 1900s).  Along with that, we serve a classic New York dish, Lobster Newburg, which dates from 1876 and Delmonico’s Restaurant. 

 

For dessert, we end back in the Bluegrass with Derby Pie, along with a Kentucky Bourbon version of Cherries Jubilee.
